Just to clarify from your last answer. When I reach the stiff peaks stage for the meringue (pavlova) I carry on whisking whilst gradually
incorporating the sugar even though that could be for a few minutes?
I’m desperate to get it right, suppose it’s all about timing and trial and error !

Hello Klaas,
You only need to whisk for as long as it takes to incorporate each spoon of sugar. I’d say for about 10 – 15 seconds after each spoonful of sugar.
