Mini Christmas Cake Loaf Cakes

Christmas cake in mini loaves!

Thanks for the answers so far about Christmas Cake in a loaf tin. I will try baking a loaf (based on your answers) plus I want to make cake mini-loaves to give as presents this year with remaining mixture.

Could I please ask what the estimated cooking time and temperature (fan-forced) would be for using a mini-loaf tray that produces 12? Dimensions of tray are: 37.5 x 26.5cm (14 three-quarters x 10 half inches) and the liquid capacity for each loaf is 100mLs (so max total liquid capacity 1.2L).

The tray is also loose-based - hopefully ok?

Hello PammyK,

I’m not sure how much mixture you will need but with regards to the baking the result will not be exactly the same as a large one as it’s the long slow cooking that slowly caramelises the sugar and develops the flavour.

They will probably take about 35 – 40 minutes to bake.
