

I have a glut of blackcurrants and trying to find ways of using them. I like Delia's Vanilla Cream with blackcurrant coulis but don't have an inch of space in my small freezer for the vanilla cream. Would this work just chilled in the fridge with the coulis rippled through or have you an alternative suggestion that would take blackcurrant coulis (not freezer). Many thanks. Eileen

The vanilla cream terrine is chilled not frozen. I do not think rippling will work.
We made jam with our glut of blackcurrants.
But if you don’t fancy that you could make fruit compote to have with vanilla cheesecake or meringues or you could adapt the following recipes to use your black currants…..

Cranberry and Orange Brulee
