Making small Christmas Cakes

Hello, I would like to make mini Christmas cakes this year that I can give to people as we may not be able to get together. Can I use the normal Delia recipe and put it into mini sandwich tins or something similar, or do I need to have different quantities for the recipe? If I do bake in a mini sandwich /loaf tin with say 12 portions per tin, what would be the cooking time?

Hello Aine,
We don’t make mini Christmas cakes but I think a 2 egg recipe will fit in a 1 L capacity loaf tin.
Make sure you protect the outside of the tin and cover the top with parchment (so that it doesn’t touch the surface of the cake mixture).
Same temperature (140 on the lowest shelf in a conventional oven or 115 on any shelf in a fan oven).
I would have a peek at 1 hour to see how it’s looking and then check every 15 to 20 minutes, but I think it will take 2 hours to bake.
