I would like to make the Simnel cake for Easter - how long in advance should I make it?
As Simnel is a light fruit cake it doesn’t mature in the same way as a rich fruit cake, so it it’s more likely to dry out.
We usually eat it within 3 weeks. It will freeze very well if you want to make it sooner.
