I want to make my daughter's wedding cake using Delia's Rich Fruit Cake recipe from her 1982 edition of the Complete Cookery Course. I have made it as our Christmas cake for many years and it is my daughter's favourite cake so she'd love it as her wedding cake. I have 6", 9" and 12" cake tins to use but cannot find the quantities for a 12" version in Delia's chart as it only goes up to an 11" recipe. I would be so grateful if you could please let me know if there is a 12" version I can follow to make sure I get the quantities right? Thank you!
"Further to my question about a recipe for Delia's rich fruit cake for a 12" version I should add that in my friend's version of Delia's complete cookery course which is the 1976 edition there is a chart showing the quantities for a 12" wedding cake but it is a slightly different recipe to the rich fruit cake I've made, using more fruit and eggs. Does this give more height to the cakes than the rich fruit cake recipe? Does it taste very similar to the rich fruit cake recipe which is so loved in my family? I also have a fan oven so guess I will need to reduce the cooking times shown? Thank you!!"
