

Hi - I’m going to make the Creole Christmas cake however am keen to make mini cakes as gifts - am I able to use smaller tins/ramekins to cook the cakes in - what size would you recommend and how long would I need to cook them for - thank you

The problem with tiny Christmas cakes is that they do not benefit from the long slow caramelisation.
We haven’t made Christmas Cakes in ramekins but I expect they would bake in about 35 minutes.
Have you thought about making an 8 inch square cake and cutting into 4 like Delia’s Irish Whiskey Cakes…

Or for smaller cakes you could do half the mixture in the same tin (probably 2 hours baking time) and cut it into 16 squares if you wanted little cakes. I think they would be about the same size as you’d have if made in a ramekin but they would have the depth of flavour that is achieved with longer cooking.
They would make lovely little gifts when individually decorated.
