I have couple of questions about the 'ultimate carrot cake'
Firstly how long can I keep it, and secondly, since it is cooked in two tins is it possible to make half the mixture and just make one tins worth ? (We are a small crowd, of two only!)

Yes, absolutely you can halve the recipe and bake it in one 20cm sandwich tin then halve and stack the two halves.
The filled cake will keep for about three days, covered in the fridge.
Or it can be frozen (either as a large piece or in slices). As it's ‘squidgy’ it’s best to open freeze then wrap well when it’s frozen solid.
