

Hi Lindsey,
I”m roasting a side of salmon for a small family celebration. I’ll be serving Bearnaise sauce as an accompaniment.
As I want to prepare in advance rather than making the sauce on the day ,would the addition of the whipped egg whites as in the foaming hollandaise recipe be ok to stabilise the mix?
