

Hello Lindsey,
I love to make dacquoise ( as in hazelnut meringue cake) but every time I have the same problem. I always follow the instructions. Nevertheless, the bottom of it is quite soft and looks like soaked in syrup . The top is very crunchy but detached from the middle.
Any help would be really appreciated.

I think it may be that you are over whipping the meringue before you add the sugar and perhaps whilst adding the sugar too.
