

Hi I usually make Delia's classic Christmas cake but scaled down to a 6inch round cake tin. I would like to try Scottish whisky Dundee cake but is it possible to scale this recipe down to fit my 6 inch tin? Also will this cake keep until Christmas if I make it now, 18th November,

I would do 2/3 of the recipe (i.e. a 2 egg mix) for a 6 inch tin.
Same temperature – 170C using conventional heat or 150C in a fan oven. I’d take a peek after 1 hour.
Dundee cake does not keep like a rich fruitcake, I would keep it for a week or so but if you need it to last longer I would freeze it on the day that it’s baked.
