Can you please give me a recipe for a sponge cake in a 4inch round spring tin. Along with the timing in fan oven please. Also what would be the substitute to turn into chocolate. Cake

Hello Maggie,
A 3 egg sponge mix will make 4 x 4 inch cakes.
So, for an individual 4 inch round sponge I’d use 50g beaten egg and the same amount of sugar, butter and SR flour (with ½ a teaspoon of baking powder if you’re doing the all-in-one method).
To make it into a chocolate sponge I’d add a rounded teaspoon of cocoa to the flour.
I’d avoid the fan setting if you can in favour of a conventional setting but if you can’t reduce the temperature in the recipe buy 20 degrees.
I’m not sure how long it will take to cook but I’d try 15 minutes.
