

Dear Lindsey,
I have the task of making cake for my wife's 60th birthday - 60 guests. I'm not an experienced baker so this may be daft but I was thinking about making 6 loaf-tin cakes to construct an L and an X (60 in Roman numerals) and wondered if the Chocolate Souffle cake would be suitable for this. How would I adjust ingredients, cooking time and temperarure for the different tin?

I don’t think that’s daft at all. I think your wife is very lucky to have such a thoughtful, caring husband.
I think your idea is doable. Perhaps you’ll need 7 cakes and use 2 of them to do the vertical part of ‘L’??
The chocolate soufflé cake is quite shallow (about 4 cm). Are you intending to arrange the cakes in the LX format and dust them with cocoa and decorate with candles (& perhaps some flowers)? Or are you planning something else in the way of presentation.
If you want to make the loaf tin cakes so the come out as they would if made in 8 inch round tins I would do 2 loaf tins per (4 egg) recipe and I think they will take about 20 minutes to bake. If your making 2 loaves at a time.
You will need to line the tins and I would cool them completely (perhaps even chill them in the fridge to firm them up) before you remove them from the tins as this is quite a fragile mixture and presumably your loaf tins do not have loose bases.
This recipe does freeze very well if you want to get ahead.

I just wanted to let you know that I made the cake for my wife's birthday. Although the planned event had to be cancelled I persevered with my idea for a cake for 60 and, somehow the 2 of us have managed to eat it all. So I think that says something about the recipe. I found some tins in the shape of L and X so was able to use those rather than struggling with my original loaf tin idea.
I'd like to send you a picture but I can't find a way to attach it. I'll attempt to e-mail it.
On anther front, I found a Delia recipe for bread in the front of my old copy of Delia's Complete Cookery Book - I tore it out of the Radio Times about 1986 I think. I've resurrected my bread making and it is now our staple for the foreseeable future.
