

This year as well as the old faithful creole Christmas cake, I am going to make delias light Christmas cake.
My question is whether this can/should be made in advance, and whether it can/should be fed with alcohol?

A light Christmas cake doesn’t mature like a rich fruit cake but as the proportion of fruit is still quite high it does keep longer than something like a cherry or Dundee cake.
We usually eat it within 3 weeks. It will freeze very well if you want to make it sooner.
We do not feed the Light Christmas Cake

I have to admit that we tried a wedge of the light christmas cake before putting the rest of it in the freezer and it was absolutely wonderful. As you aluded to, it is like a rich fruit cake in texture and density, but much paler in colour and quite a treat. Another christmas tradition started I think!
