

Dear Lindsay,
I would like to make the LIGHT GLACE FRUIT CAKE from my well-thumbed "Delia Smith's Christmas" for my son's 50th birthday in June. I shall have to double the quantity to serve the number of guests. I have a tin which measures 12" x 9" x 2" (sorry, I've never learnt to cook in metric!). I would be grateful if you could please tell me whether the double quantity would fit in the tin, and what the cooking temperature would be. Many thanks - I really would appreciate your help.

Thank you for your quick response Lindsey. The liquid capacity of the tin I mentioned is approx. 3.5 litres. I hope this will enable you to calculate how much mixture it will hold. Temperatures and timings would also be much appreciated. I look forward to hearing from you. Many thanks.

I would do 1 ½ times the recipe.
Same temperature and cooking instructions.
Start with the same timings then if it isn’t springy hen the full time is reached check it every 15 minutes until it is.

Many thanks for another quick response. I'm grateful for your advice re. using one-and-a-half times the quantity in the tin, but will make up twice the mixture and cook the excess separately (and for a much shorter time obviously) in a loaf tin. I could then perhaps stack it on top, but off-set, so that it doesn't look like a wedding cake ..... or perhaps we could simply enjoy it for tea!
Speaking of wedding cakes, I made my son's twenty-two years ago using Delia's Christmas cake recipe - three square tiers - and everyone declared it the best they'd ever eaten. (Do tell Delia!) I had to consult another source for information on quantities and timings of course, as there was no on-line forum then. I had been making the cake for Christmas for many years at that point, and still do so now. It never fails, and I've never tasted a better one.

I'm not sure my subsequent message reached you, as I seem to have gremlins in the computer at the moment, but I shall follow your advice re. quantities etc. and am sure the cake will turn out well. It's great to be able to access such specific information on line.

Two times might fit as it isn’t a cake that rises much. The capacity of out 8 inch tin is 2.5L so in theory 1 ½ times should be about right. If it is then baking a second smaller cake is a good idea.
