I intend using Delia's Creole Christmas cake recipe for my mother's 98th birthday party. I have doubled the quantities and my question is two-fold;
What size tin do you recommend?
How long should it take to cook in a fan oven?
I have been using this recipe since 1990 but not these quantities.

Hello,
I would do a double recipe in an 11 or 12 inch round.
Protect the cake with brown paper round the sides and cover the top with parchment from the start.
Bake at 120C if you use a fan setting and have a peek at 4 ½ hours then every 15 – 30 minutes after that depending on how it’s looking.
