I would like to use Delia's Dundee cake as a substitute for Christmas cake. How long before Christmas should I make it? (I will feed it with whiskey and add some to the mixture).

Because of the smaller amount of fruit, a Dundee cake does not keep like a rich fruitcake.
It will keep for a week or so wrapped and stored in an airtight tin, but if you want to keep it longer, I would freeze it, preferably on the day that it’s baked.
Some whiskey in the raw mixture (perhaps instead of the milk) will be very nice however I would ‘feed it’ sparingly as the higher proportion of cake to fruit is likely to go a bit soggy.
