

My mum (now no longer with us) used to cook Lamb’s kidneys with leeks, mushrooms and green peppers in a Far Eastern style dish served with boiled rice. I loved it of a cold evening when I was in my teens, but I don’t know the recipe. Mum used to say it was a Delia Smith recipe..... any chance of finding it for me?

I’ve asked Delia about this and there is nothing that seems to fit your recollection exactly but we think your Mum may have made her own adaptation of one of the recipes in Delia’s Cookery Course book.
