

Hi, In your Simnel Cake recipe you say: "Finally, take a double square of baking parchment with a 50p-sized hole in the centre (for extra protection during cooking) and place this not on the top of the mixture itself but on the rim of the liner. " Should the square with the hole sit on top of the tin only and not touch the cake? Should there be some liner around the tin? Thanks

Hello,
The inside of the cake tin gets lined on the base and the sides.
The parchment cover sits on the ‘side’ liner.
You don’t need to put any protection around the outside if the tin.
