Hello Lindsey, Happy New Year to you and your family. Can I ask a question please - how long would yourself and Delia keep the Turkey Dripping and Jelly from Delia's Christmas Day Turkey recipe in the fridge? I've got some left over and was wondering if I can use it for a family Sunday lunch coming up in a couple of weeks. It looks all fine now - just wasn't quite sure. The turkey cooking method was perfect. Thank you again. Your answers are always so very helpful. Best wishes for 2017, Fat Rascal.

Hello Fat Rascal,
Thank you, Happy New Year to you and yours too.
Officially, considering food safety guidelines, I should really say that you could keep it in a sealed container in the fridge for about a week.
But unofficially, providing it has been stored in a cold part of the fridge, in a clean sealed jar, we would keep it for a month for cooking. When you use it make sure it looks and smells good – the rendered fat should look clean and feel firm and any jelly should be set. If it’s liquid or has any signs of deterioration discard it.
If you want to keep it for longer than a week it’s best to store it in small containers in the freezer but you need to do that when it’s fresh.
Best wishes
Lindsey
