

How long can you keep a Christmas cake? I made ours in September, it was heavenly, totally loved it. Decided I couldn't wait a year for another one, so I would make it now, mature for a couple of months, then have beautiful cake to enjoy through the following weeks. However, I bought quite a lot of fruit, so actually made 2 this time! I have wrapped them in double greaseproof and double foil, and will just open 1 up to feed it from time to time. I was sure that I remembered my Grandmothers Christmas cake always been a year old, and totally moist and beautiful, but I'm doubting myself now!! Would it keep for a year? Or am I having misremembered Granny adoration?! Lol What do you think?

Fed with brandy, wrapped in parchment and foil and stored in an airtight tin in a cool place it will keep for at least 6 months. It will be fine to eat it for a good while after that but I don't think it will be special enough for Christmas.
