

I've covered a rich (and very well fed!) fruit cake with marzipan, followed a few days later by fondant icing. How should I store it, and how long will it keep that way?
(Can't put it in an airtight container as it's 12" cake (for an anniversary) and I don't have a container large enough... :(

Hello,
I would buy an inexpensive big plastic food box to store it in to make sure it’s protected. But you could get a cardboard cake box. You need to keep it cool but not refrigerated. The fruitcake part will last for ages. The fondant icing with deteriorate over time but it will be fine for a week or so.
