

Please can you tell me how long will marzipan keep? How do you store it? Also do you have any tips as how to get the marzipan firm so that it does not stick to the rolling pin and you could lift it up with the rolling pin to lay it over the fruit cake.I am planning on covering a fruit cake in a couple of days time. Thank you.

We do not freeze Delia’s marzipan. We make it fresh, wrap well, keep in a cool dark place and use it within a few days. Marzipan dries out over time, which makes it harder to roll.
Once it’s on the cake, left for a week and then iced it will keep well of up to 6 weeks stored in an airtight container in a cool dark place.
It doesn’t ‘go off’ as such for months but it tastes nicer eaten sooner rather than later.
If your marzipan is sticky it is too wet I presume you are making your own. We use icing sugar to roll it out but I haven’t found that it sticks to the rolling pin. Knead the marzipan on an icing sugar dusted surface first, which will help it roll out easily without cracking.
