Delia's Classic Christmas cake recipe.
I've made this cake many times in various sizes, all very successfully, however, I've now been asked to make a 12" square wedding cake, which I have never made. Your recipe conversion chart only goes up to 10". As it is such an important cake can you upscale the ingredients for me or tell me the percentage increase I need from Delia's original recipe in her Christmas book.

May I ask a question please - I am making Delia's Oven Baked Mushroom Risotto tomorrow night. However, I forgot to buy the dry madeira! Can I substitute it with Marsala? Or do you think I should top if up with just warm water?

Hope all's well with you this fine Saturday morning.
We've just had a 20 minute power outage and I had some ginger biscuits that had been put in about five minutes previously. I left them in and they had turned golden with the residual heat but were still a bit soft so they are now having 10 minutes to cook them properly.
It leads me to ask what is the best thing to do if I'd had meat in the oven, leave it in and hope the power returns quickly or take it out and chill it or are neither of these options good if it's meat?
Hi I'm planning on cooking my wife and I Delia's Classic Risotto Milanese, and also the roast tomato soup. On the risotto recipe it says to let stand for 5 minutes before serving - is it going to be OK to leave it a bit longer while I serve the soup and eat it? Say 10/12 minutes?
