

I’ve mixed my brown sugar in with my dry fruit etc for my traditional Christmas cake!!! Got a bit too excited. Can I now add melted butter in the morning and then whisked eggs or am I doomed. Help! X

If the sugar has melted…
I would pop it in a colander over the mixing bowl then following the all in one method add the spreadable (or very soft) butter, flour, salt, spice, treacle & eggs, then whisk until smooth before you fold in the fruits.
If the sugar is still granular…
I would use a wooden spoon instead of a whisk.
I think I’d start by gradually adding the sifted flour, salt and spice to the fruit mixture, then when that is thoroughly combined, I’d add the spreadable (or very soft) butter and mix until it’s combined and finally, I’d gradually mix in the treacle and beaten egg.

Thanks Lindsay. The sugar was half and half by morning granular but stuck to the fruit and a colander wouldn’t have separated anything out. So I opted for the second method and it worked beautifully - hooray.
