In preparation for the grape harvest next week, I want to make the chocolate truffle torte. Can I use milk or fruit juice instead of rum? and Mascarpone instead of double cream as the cream here is more like single cream but can be whipped successfully but it does not always stay that way,

Yes you can use 100ml of milk or juice. I’d do milk.
I haven’t tried it with mascarpone but based on the information you have given, I would suggest, 370ml mascarpone and 200ml cream, both whipped and then folded together.
