

Loaf pan question!
I've bought a silverwood 2lb pan to make the ginger loaf cake in Delia's Cakes. However, I'm getting worried it's too large. The 2lb loaf liners I bought don't fit it properly (I'll go any buy deep fill ones and hopefully they will fit!). I've checked online and the link to the loaf tin is to the 1lb Silverwood loaf pan...have I bought the right pan? If it's too big can I scale up (double?) the quantities and length of time? Many thanks in advance!

It sounds lik you have the Silverwood 2lb loaf tin.
We use the Silverwood 1lb loaf tin which is equivalent to a traditional 2lb loaf tin.
Yes you can double the recipe but I'm not sure on the time - perhaps 2 hours and if it looks like its catching - cover it loosly with a piece of foil.
