

Preserved Ginger Cake - ingredient quantity clarification needed
The Preserved Ginger Cake recipe specifies "pieces" of preserved ginger.
I'd like an idea of the weight of the pieces included in the body of the cake please.
It is clear to me from looking at the picture of the cake, which has been decorated with only two pieces, that the ginger available in the Uk are much larger than those I buy here. I could use trial and error I guess, but the result could be off.

Hello Anniez,
On average, when they have been well drianed of syrup, they weigh about 25g each so about 125g (5 pieces) into the mixture and 50g (2 pieces) to decorate but you can use a bit more in the mixture if you like. Up to 150g will work well.
The Preserved Ginger Cake is one of our all time favourites. We hope you enjoy it.
