I made Delia's Greek Lamb with Lemon and Garlic the other day and it emerged from its foil parcel disappointingly hard and dry after the 3 hours stated in the recipe – no trace of the 'wonderful cooking juices' mentioned! In fact, it was glued to the non-stick foil.
There was no mention of any oil at all in the recipe, simply the lemon juice. My thoughts are: should I reduce the cooking time, or add oil to the parcel before sealing, or maybe both? Might it be a misprint in the first run of How To Cheat?
