Gluten free scones
Hi Lindsay
I tried making scones using gluten free flour but they turned out crumbly and also flatter than normal. Any advice ?
Thanks
Dilip

Hello Dilip,
We do not have a specifically gluten-free scone recipe. We tested them when we worked on the cake book, just replacing the flour and baking powder with GF flour and baking powder. They need more liquid as GF flour absorbs more. The results were fairly good but they really need to be eaten the same day.
I think if you add more milk a softer dough will rise more.
