

I have just checked Delia's Christmas Pudding recipe to see how to make it gluten-free and it looks as if the instructions have been cut off as it says:
"To make this recipe gluten-free: Replace the suet with either gluten-free or vegetarian suet. Use gluten-free white flour and breadcrumbs made from gluten-free bread, and r"
Please can this be fixed and/or can you tell me what else it should say.
Also a lot of vegetarian suet is not actually gluten free as it has flour around it and gluten free suet is hard to source, are there any other options - it doesn't need to be vegetarian - could you use lard? or would that be totally wrong?

We will get it corrected but in the meantime this is what is says….
"To make this recipe gluten-free: Replace the suet with either gluten-free or vegetarian suet. Use gluten-free white flour and breadcrumbs made from gluten-free bread, and replace the stout and barley wine with the same amount of sherry. If your using gluten-free flour, you will need to add s pinches of baking powder to the gluten-free white flour.”
I doubt that gluten free white self-raising flour was available when the recipe was originally published.
Gluten free vegetarian suet is about but not always easy to source.
Some people do use lard. I don’t like it. If I had to use a fat substitute I would suggest frozen, grated butter tossed in a little of the gluten free flour.
