

I have cooked Delias Beef Wellington on Xmas day for as long as I can remember but this year we are away the days before so cannot prepare the mushroom/onion mixture as it takes too long. Is there a cheat like using dried mushrooms or could I freeze the mixture if made in advance? Please suggest something

I would make and freeze it, then defrost it in a sieve over a bowl so you remove the excess water or if you have time cook it a bit more to evaporate the excess moisture.
