

I am not in the habit of making much pastry as it is usually hit or miss. I plan to have some friends in for coffee soon and intend to make Delia's lemon meringue pie. Could I make the pastry and bake it the night before and fill it in the morning.

Yes, you can do that. Once baked, let it cool and then store in an airtight container overnight.

For the lemon meringue pie baked in a pie plate you don’t need to use the foil (unless you want to!) as it has a strip of pastry around the rim which helps stop it sliding down the edge.
