Can I prepare Gratin Dauphinoise and refrigerate a day before cooking?
We wouldn’t assemble them ahead but you can peel the potatoes ahead and keep them in water but not slice them as your remove too much of the starch.
You can butter the dish and also mix up the cream, milk, garlic nutmeg and seasoning.
So that all you have to do is slice the potatoes, swish them in the water, dry them and layer up with the cream mixture.
Dot with butter and bake.
