

Hi Lindsey, I adore Delia's Fromage Frais Cheesecake with Strawberry Sauce recipe. Can I prepare the cheesecake itself 2 days before use - will it keep ok in the fridge and then I'll add the sauce when serving ? Your advice would be invaluable to assure the cake is ready for my husband's birthday. Many thanks, Louise Decatra.

We would make this a couple of days ahead and keep covered in the refrigerator, then remove for the tin on the day. Or you can make ahead, chill, unmould, freeze until solid, wrap well once frozen and then keep frozen for up to 2 months.
Yes do add the sauce when you serve it.
