Freezing the Caramelised Onion and Goats Cheese Tarts

Hi LIndsey,
Could you please tell me whether I can freeze Delia's Caramelised Onion Tartlets with Goat's Cheese and Thyme? Thanks very much.

Hello Jan,
If you’ve already made and baked them, then yes you can open freeze, wrap and keep for up to 3 months.
But if you haven made them yet and want to get ahead, I would bake the pastry cases, fill with the caramelized onion and top with the goats cheese. Then open freeze, wrap and freeze for up to 3 months. Then defrost overnight in the fridge, tope with the oiled sage and cayenne and bake as per the recipe.
