I would like to know if I could freeze Rhubarb (now in spring, when it tastes most delicious). For example your Rhubarb compote.
Many thanks to you Delia for your life-long help. I practically learned cooking and English with you for the past 30 years! Now my kids (2 boys) continue on this path…

When Delia has a surplus of rhubarb (which we didn’t this year), we tend to freeze rhubarb as a crumble, muffins, a purée for a yoghurt fool or as ice cream.
But fresh rhubarb can be washed, dried, cut and frozen flat on trays, then transfered into freezer bags when it has frozen solid. It will keep for up to one year.
