Hello Patti,
I would assemble the cake, serve and then freeze the leftovers.
However, if your preparing ahead for a special occasion I would freeze the layered sponges (with parchment between them) on a cake board, in a freezer bag. Then defrost and layer with the lemon curd on the day I’m serving it.
