

Christmas Rum Sauce.
Last year I made Delia's rum sauce, which was very popular, and would like to do the same again.
My question is in order to reduce pressure on the day, can this be made the day before and kept in the Fridge and reheated as required.

Hello Alan,
You could freeze the white sauce part then add the remaining butter rum and cream when you heat it.
You might find it separates and needs a vigorous whisk to bring it back together.
As the all in one sauce method is so easy, overall I would say making it fresh is less effort than making, freezing and reviving it!
I would have everything weighed out and ready to go.
