Yes you can freeze the banoffee cheesecake.
Bake the cheesecake as per the recipe and cool completely at room temperature. Open-freeze on the same day to prevent damage, until it is solid. Wrap in freezer film or foil and put it into a rigid container, for up to 2 months. When you want to defrost it, unwrap whilst it’s still frozen and place on a serving dish, cover and leave to defrost in the fridge overnight. Prepare the fresh bananas for the top just before serving.
For the sauce, cool completely and pour into a rigid container. Seal and freeze for up to 2 months. Defrost overnight in the fridge.
