

Hi There, I am hopefully going to be making Marmalade with Delias recipe when the Seville orange are in the shops.
I have an old fashioned preserving pan which is aluminium is it ok to use that as I have read it might affect the taste because
Of the citrus reacting with the aluminium ?
If I can’t use that, I have a 4.5 ltr stainless steel pan that I could use but the recipe states 6 ltr pan. .
Would I be able to halve everything and make it in two batches in that, if so would that mean halving the cooking
Time as well.

Hello,
We still use our old aluminium preserving pan so you could use that for a full batch or yes you could use your 4.5L pan if you want to make a half batch.
The cooking times stay the same.
