Fluffy Jacket Potatoes

Hello Lindsey Could uou advise me on a good potato for jacketing. Delia seems to favour Desiree potatoes, but currently I cannot source these where I live and the "all purpose large" potatoes that are sold as suitable don't quite tick the box. When split, the flesh is solid and a strange "yellow" rather than fluffy and white like a Desiree.
