Hello Lindsey
HELP! My daughter is getting married in November and has asked me to make a 3 tier fruit wedding cake. She has asked me to make Delia's Irish whiskey christmas cake as I once did it for christmas and she remembers liking it! However, is it suitable for a wedding cake? Does it cut up well? I have had a go at the bottom 11" tier already and soaked the fruit for a week but am being told by helpful friends that it needs to cut up well and that I should be feeding it every week? I am quite willing to start again and just want to produce a cake that will cut up well and appeal to fruit cake lovers. Please advise.
Many thanks
Jeanne

Hello Jeanne,
The Irish Whiskey cake is an adaptation of the creole cake which doesn’t have to be fed but we often do!
I would feed the 11 inch cake with 3 - 4 teaspoons of whiskey about 6 times between now and the wedding.
Usually this cake cuts very well as long as it has the long slow baking.
Bets wishes
