All of the temperatures are for conventional heat.
How do the temperatures appear on your fan assisted gas oven?

I made a Christmas cake in 140 but it was a bit burnt and I wondered if it should have been lower. Thanks
Your Christmas cake was most like burnt because you used a fan setting.
All of Delia’s recipes with an eclectic oven temperature have been tested in a conventional oven, using top and bottom heat.
If you have a fan oven, we advise that you should reduce the given temperature by 20 degrees.
However as the classic Christmas cake is baked on a lower shelf I would reduce it to 115 degrees.
As fan ovens cook much faster I would have a cautions peek at 3 hours the first time you bake this recipe in your oven at this temperature on a fan setting.
