

Hi. I've been using Delia's recipes for over thirty years and none of her recipes has ever failed me before, up until I made the coconut and lime cake! It was flat as a pancake and the texture was quite unpleasant. I'm an experienced baker and I followed the recipe exactly, and also used the correct sized tins. My ingredients were freshly bought. Could the probem be due to the coconut milk powder? The rest of the ingredients and the method are pretty standard so I don't think they're the cause of the problem. (The icing however was excellent and I will be making that again).

I agree the coconut makes the cake rise a little less than the classic sponge.
It may be the eggs. Large eggs are often a often on the small side now. To check I’d use 130g of beaten egg for 2 large eggs.
