

Dear Lindsey, when writing about preparing beef casseroles, Delia mentions that one can toss the meat in seasoned flour first. I have done this and found the results to be rich and flavoursome. When I am very busy could I do this the day before and keep the meat in fridge until I cook it without this causing a problem?.

Everything can be prepared ahead but don’t coat the beef in flour until you’re ready to brown it.
You can prepare and cook a beef casserole ahead as long as you cool it quickly and keep it refrigerated in a sealed container. It tastes even better cooked a day or so before and reheated.
