I wonder if you can help me?
I've just been making the traditional mincemeat, which I have done before, but because I'm ill and in a hurry I've made a couple of silly mistakes. Firstly, I'm making half the amount in the book, but forgot to halve the amounts of cinnamon, mixed spice and nutmeg before adding. So basically, there's double the amount of those ingredients. Will this matter?
Secondly, and more worryingly, I added the brandy to the mixture at the same time as everything else i.e. before leaving it overnight and then cooking for three hours. Do I need to start from scratch? Will it not matter? Or, should I leave it overnight, cook for three hours and then add the brandy again?
