I followed delias steak and kidney pudding recipe to the letter I have just dished it up and the filling is grey and uninviting what have I done wrong I was suspicious as it didn’t need browning first and the gravy is very watery inside

The beef doesn’t need browning. The five-hour steaming slowly browns the beef and during the cooking the flour thickens the water and juices from the meat. We haven’t had any problems. Perhaps it was the beef! Did you put the flour in? Delia uses old-fashioned tablespoons so that is the equivalent of 4 dessertspoons of flour in this recipe.

Hello Lindsey I did put the flour in and so do I in the respect of tablespoons the beef was purchased from a reputable supermarket that delia indeed endorses I am a qualified chef and was somewhat surprised to your response as I purchased the beef fresh that morning
