

Hi, Can the goats cheese and onion mini muffin recipe just be doubled to make regular sized ones? how long shall i bake for?
also, is the large blueberry muffin cake freezable? what do you then advise for defrosting times?

We haven’t tested them in larger size cases but I expect the recipe that makes 24 mini muffins will make 12 patty pan size or 8 large muffins.
Patty pan size will probably need 25 minutes and large ones 30 – 35 minutes.
The blueberry muffin cake can be frozen for up to 3 months.
On the day that it’s baked, make sure it is completely cold before wrapping well in freezer film or in a freezer bag (I like to put it on a thin cake board first).
On the day that you want to serve it, unwrap it and put it in a container (or cover with and upturned bowl) and leave to defrost at room temperature for about 3 hours.
