

Hi, Have most of Delia's books and use the site often, but am always stumped by the American measuring spoons versus UK.
I know Delia uses the method I was taught in school in UK, which uses the British table, dessert and tea spoons, all of which I have. However, for the life of me, I'm unable to remember if the measurement should be 'the same above as below' the bowl for a full measure and leveled off, for half the measurement, or if the full spoon measure is level? Hope this is clear???

A tablespoon in the UK is 15ml but if you are following Delia’s recipes, Delia says this in her book….
‘I have to confess I have never liked measuring spoon sets because
This means that when you follow a Delia recipe you should use a 20ml spoon for a tablespoon or 2 dessertspoons per tablespoon will be the equivalent.

Yes I read this in her book, but unsure as to whether the measure of dry ingredients is level, or rounded/heaped - above the bowl of the spoon? Thanks.

One last question, regarding recipes. Yesterday, reading my books and looking on site for certain pies, I came across a term I have absolutely never heard of before - regarding pre - baking a pie crust - for a custard, or other tart. What does , 'standing slightly proud of the tin' mean'?

If you ease the pastry up the sides of the tin (whether it trimming first, or not) it allows for shrinkage when baking.
